{ Double Chocolate Peanut Butter ~ Ice Cream Sandwiches }

What do you get when you combine my last two posts {Chocolate Sugar Cookies + Salted Chocolate & Peanut Butter Swirl Ice Cream}...? THESE. The ultimate ice cream sandwich recipe, that is. You just can't go wrong with homemade! J

If you've never made homemade ice cream, don't fret! It's not as complicated as it sounds - at all. Just follow these easy steps!

And the cookies are even simpler, with ingredients you probably already have in your pantry and fridge. Here's the recipe.

Now that you've got those two steps down...all that's left is assembly! {And eating, of course.}

All you need is 2 cookies & 1 big scoop.

Yes, they taste just as good as they look. 
The cookies have an amazing fudgy brownie center, with crisp edges. And the ice cream is
 sweet & smooth with swirls of salty peanut butter and chunks of peanut butter cups. 
The combination is out of this world.

They also store great in the freezer! I threw mine together ahead of time to take the photos, and then wrapped each separately and froze them for later. 

And because rainbow sprinkles are my favorite, I couldn't resist decorating a few!
